In this example, it's as simple as making the lithium cell the same size as the three AAA battery pack in the Dollar Tree flashlight.
This was accomplished by a small piece of wood, with metal (screws in this case) going through the wood to extend the negative pole.
This particular flashlight's LED has a forward voltage of 2.61v, so even if the lithium cell does not have protection circuitry, there's no fear of it being over-discharged.
